Liquid Minerals (Nigari)

Liquid Minerals (Nigari) is a natural liquid that is a by-product of the salt making process consisting of minerals in the salt brine that do not become part of the salt crystals. Consists mainly of magnesium chloride (nigari) and up to 60 other trace minerals. Nigari (derived from the Japanese word for "bitter") is an important coagulant used in the preparation of tofu from soy milk. Salty liquid that contains a high concentration of minerals such as magnesium, potassium, calcium, manganese, boron, iron, copper, zinc, selenium, chromium, and chlorides. Can be used in various formulas for adding nutritional and humectant properties.
