Guar Gum

Guar Gum is a white, to yellowish, odorless, powder derived from the guar plant. The water-binding and rapid hydration of Guar in cold water to form a viscous colloidal solution is its most important characteristic. These properties are utilized in ice cream stabilizers, especially in high temperature, short-time processes, where conditions call for 80° Celsius, for 20–30 seconds. It is used as a stabilizing, thickening, and controlling agent in dairy, bakery, meat, and beverage applications.
